You can get people to work for you on a voluntary basis - as long as they are in agreement about all the hours and the job they are doing then it is perfectly legal. And then you can just have an informal agreement that you will provide some beers afterwards. But you might want to make it clear from the outset what you will be providing just so there is no confusion, in case people think they can drink as much as they like and end up costing you more! So tell them that you will give them xx amount of drink at the end of every night.
